CHARACTERISTICS

Vinification Drying of the grapes on the vine for 15-20 days by cutting the peduncle to avoid the passage of sap. Maceration and alcoholic fermentation for 8 days with selected yeasts at a controlled temperature of 24-26° C
Ageing In French oak barrels for 3 months
Colour Deep ruby red
Nose Hints of ripe fruit, strawberry jam and blackberry wrapped in cocoa and tobacco notes
Taste Full and harmonious on the palate with an enveloping finish
Best served with Roasted meats and game dishes.
Excellent with mature and savoury hard cheeses
